Today is my son's 24th birthday!!!
I still can't believe it y'all!! It seems like just yesterday I was crying my eyes out watching him take his first steps, attend 8th grade formal, and later graduate college.
Now he's adulting in the world, working a corporate job, and trying to balance it all. Sounds familiar, right?!?
A big reason why Simply LaKita exists is because 10 years ago I was working a corporate job trying to find quick and easy ways to make a comforting dinner after a long work day. I wanted to document my journey and have a digital recipe box to store all of my kitchen experiments.
Since many of the recipes were approved and favorited by my son Mike, it only feels right for me to share his 3 favorite recipes :-)
